Spiced Chickpea & Carrot Wraps with Yogurt Sauce

For the Wraps:

1 can (15 oz) chickpeas, drained and rinsed

1 large carrot, grated

1 red bell pepper, diced

2 green onions, chopped

2 tablespoons olive oil

1 teaspoon ground cumin

1 teaspoon smoked paprika

1/2 teaspoon turmeric

Salt and black pepper, to taste

4 large whole wheat or spinach wraps

For the Yogurt Sauce:

1 cup plain Greek yogurt

1 tablespoon lemon juice

1 teaspoon garlic powder

1 teaspoon fresh dill or 1/2 teaspoon dried dill

Salt, to taste

Optional Garnishes:

Fresh cilantro or parsley, chopped

Avocado slices

Feta cheese, crumbled

Instructions
 

Prepare the Yogurt Sauce:

    - In a medium bowl, combine the Greek yogurt, lemon juice, garlic powder, dill, and a pinch of salt. Mix until smooth. Adjust seasoning if necessary. Set aside in the refrigerator to chill.

      Cook the Chickpea Filling:

        - In a large skillet, heat olive oil over medium heat. Add the drained chickpeas, grated carrot, diced red bell pepper, and chopped green onions.

          - Sprinkle in the cumin, smoked paprika, turmeric, salt, and black pepper. Cook, stirring frequently, for about 5-7 minutes until the veggies begin to soften and the chickpeas are warmed through. Remove from heat.

            Assemble the Wraps:

              - Lay each wrap flat on a clean surface. Spoon an even amount of the chickpea mixture onto the center of each wrap.

                  Wrap It Up:
