1 medium head of cauliflower, cut into florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk with 1 tbsp vinegar)

1 cup breadcrumbs (I recommend panko for extra crunch)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon cayenne pepper (adjust to taste)

1 teaspoon salt

1/2 teaspoon black pepper

1/2 cup buffalo sauce (store-bought or homemade)

4 large whole wheat or spinach wraps

1 cup shredded lettuce

1 cup diced tomatoes

1/2 cup ranch dressing (optional for drizzling)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a baking sheet with parchment paper.

    Prepare the Coating: In a mixing bowl, whisk together the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Gradually add the buttermilk, whisking until smooth. If using gluten-free flour, make sure the mixture has a thick batter consistency.

      Coat the Cauliflower: Dip each cauliflower floret into the batter, shaking off the excess, then roll in breadcrumbs to coat evenly. Place the coated florets on the prepared baking sheet.

        Bake the Cauliflower: Bake in the preheated oven for about 25-30 minutes, or until the cauliflower is golden brown and crispy, flipping halfway through to ensure an even bake.

          Toss in Buffalo Sauce: Once the cauliflower is done, remove it from the oven and drizzle or toss with buffalo sauce until well coated.

            Assemble the Wraps: Lay a whole wheat or spinach wrap flat on a clean surface.
