Spicy Cajun Chickpea Wraps

Ingredients
  

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons olive oil

1 tablespoon Cajun seasoning

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

Salt and pepper to taste

1/2 cup diced bell pepper (any color)

1/2 cup diced red onion

1 ripe avocado, sliced

4 whole wheat tortillas or wraps

1 cup mixed greens (spinach, arugula, or lettuce)

Optional: hot sauce for extra kick

Optional: lime wedges for serving

Instructions
 

Prepare the Chickpeas: In a large bowl, combine the drained chickpeas, olive oil, Cajun seasoning, smoked paprika, garlic powder, onion powder, salt, and pepper. Toss until the chickpeas are well coated.

    Cook the Chickpeas: Heat a non-stick skillet over medium-high heat. Add the seasoned chickpeas to the skillet and cook for about 5-7 minutes, stirring occasionally, until they are crispy and golden brown. Remove from heat and set aside.

      Sauté the Vegetables: In the same skillet, add a bit more olive oil if needed, then toss in the diced bell pepper and red onion. Sauté for 3-4 minutes until they are tender but still crisp. Remove from heat.

        Assemble the Wraps: Lay out your tortillas on a flat surface. Start layering by adding a handful of mixed greens to each wrap, followed by the sautéed vegetables and crispy chickpeas. Top it off with sliced avocado.

          Wrap it Up: Fold in the sides of the tortilla, then roll from the bottom up tightly to secure all the fillings inside. Repeat with the remaining tortillas.
