Spicy Cherry Galette

2 cups fresh or frozen cherries, pitted

1/4 cup sugar

1 tablespoon cornstarch

1 teaspoon cinnamon

1/2 teaspoon cayenne pepper (adjust to taste)

1 tablespoon lemon juice

1 tablespoon vanilla extract

1 pre-made pie crust (store-bought or homemade)

1 egg, beaten (for egg wash)

Coarse sea salt for sprinkling

Optional: whipped cream or vanilla ice cream for serving

Instructions
 

Prepare the Filling: In a mixing bowl, combine the cherries, sugar, cornstarch, cinnamon, cayenne pepper, lemon juice, and vanilla extract. Gently stir until the cherries are well coated. Allow the mixture to sit for about 15 minutes, letting the flavors meld together and the cherries release some juices.

    Preheat Oven: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent sticking.

      Roll Out the Dough: Roll out your pie crust on a lightly floured surface into a rough circle, about 12 inches in diameter. Transfer the crust to the prepared baking sheet.

        Add the Filling: Spoon the cherry filling into the center of the rolled-out crust, leaving about 2 inches of the edge free. Make sure to allow some of the juices to drip onto the crust to create a delicious glaze while baking.

          Fold the Edges: Gently fold the edges of the crust up over the cherries, pleating as you go. The center should be left open to showcase the cherry filling.

            Add Egg Wash: Brush the edges of the crust with the beaten egg and sprinkle coarse sea salt over the crust for added flavor.

              Bake the Galette: Place the galette in the preheated oven for 30-35 minutes, or until the crust is golden brown and the cherries are bubbly.

                Cool & Serve: Once baked, remove from the oven and let it cool for 10-15 minutes. This will help the filling set up a bit more. Serve warm or at room temperature, optionally topped with whipped cream or vanilla ice cream.
