Ingredients

1 large head of cauliflower, cut into bite-sized florets

1 cup all-purpose flour (or gluten-free flour)

1 cup buttermilk (or plant-based milk for a dairy-free option)

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (adjust for spice level)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 cup panko breadcrumbs

1/2 cup buffalo sauce (plus extra for drizzling)

Fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 450°F (230°C) and line a large baking sheet with parchment paper.

Prepare the Cauliflower: In a large bowl, combine the flour, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, and black pepper. Whisk to evenly combine.

Coat the Cauliflower: Dip each cauliflower floret into the buttermilk, allowing excess to drip off, then toss it in the flour mixture until fully coated. Place the coated florets aside.

Panko Coating: In a separate bowl, add panko breadcrumbs. Take each coated cauliflower floret and roll it into the panko, ensuring it is well covered. Place the breadcrumbs-coated florets on the prepared baking sheet.

Bake for Crispiness: Drizzle a small amount of oil over the panko-coated cauliflower to help it crisp up. Bake in the preheated oven for 25-30 minutes, or until the florets are golden brown and crispy, flipping halfway through.

Buffalo Sauce Toss: In a large bowl, combine the baked cauliflower with buffalo sauce, tossing until they are fully coated.

Final Bake: Return the sauced cauliflower to the baking sheet and bake for an additional 5-10 minutes until the sauce is slightly caramelized.

Serve and Garnish: Remove from the oven, drizzle with extra buffalo sauce, and garnish with freshly chopped parsley. Serve warm with celery sticks and your favorite dipping sauce!
