Spicy Peach Grilled Chicken Sliders

1 pound boneless, skinless chicken thighs

2 ripe peaches, pitted and diced

1/4 cup barbecue sauce

2 tablespoons honey

1 tablespoon sriracha (adjust for spice preference)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper, to taste

6 slider buns (mini brioche or whole wheat)

Fresh arugula or spinach, for topping

Sliced jalapeños, for topping (optional)

Olive oil, for grilling

Instructions
 

Marinate the Chicken: In a mixing bowl, combine the barbecue sauce, honey, sriracha, smoked paprika, garlic powder, onion powder, salt, and pepper. Add the chicken thighs and ensure they are well coated in the marinade. Cover and refrigerate for at least 30 minutes, or up to 2 hours for a deeper flavor.

    Prepare the Peach Salsa: In another bowl, mix the diced peaches with a pinch of salt and a bit of lime juice (optional) to brighten the flavor. Let it sit while you grill the chicken.

      Preheat the Grill: Heat your grill or grill pan over medium-high heat and brush with a little olive oil to prevent sticking.

        Grill the Chicken: Remove the chicken from the marinade and place it on the hot grill. Grill for about 6-8 minutes per side, or until fully cooked (internal temperature should reach 165°F). Remove from the grill and let it rest for a couple of minutes.

          Toast the Slider Buns: Optional, but highly recommended! Place the slider buns, cut side down, on the grill for about 1 minute, or until golden and crispy.

            Assemble the Sliders: Slice the grilled chicken thighs into smaller pieces to fit the slider buns. Place the chicken on the bottom half of each toasted bun. Top with a generous spoonful of peach salsa, add a few arugula leaves, and jalapeño slices if desired. Place the top half of the bun on each slider.

              Serve and Enjoy: Serve immediately with additional peach salsa on the side and your favorite side of chips or a light salad.
