Spicy Popsicles with Blueberry

2 cups fresh blueberries

1 cup coconut water

1-2 tablespoons honey or maple syrup (adjust based on sweetness preference)

1-2 teaspoons chili powder (adjust to taste)

1 teaspoon lime juice

A pinch of salt

Optional: Fresh mint leaves for garnish

Prepare the Blueberries: Rinse the blueberries under cold water. If you’re using frozen blueberries, allow them to thaw slightly before blending.

    Blend the Mixture: In a blender or food processor, combine the blueberries, coconut water, honey (or maple syrup), chili powder, lime juice, and a pinch of salt. Blend until smooth. Taste the mixture and adjust the sweetness or spice level as desired.

      Strain (Optional): If you prefer a smoother popsicle, strain the blended mixture through a fine mesh sieve or cheesecloth to remove the skins. This will give your popsicles a silky texture.

        Pour into Molds: Carefully pour the blueberry mixture into popsicle molds, leaving a little space at the top for expansion. If using, place a few fresh mint leaves into each mold for an added touch of freshness.

          Insert Sticks: Once the molds are filled, insert popsicle sticks into the center of each one.

            Freeze: Place the molds into the freezer and freeze for at least 4-6 hours, or until completely solid.

              Unmold and Serve: To remove the popsicles from the molds, run warm water over the outside of the molds for a few seconds until they loosen up. Carefully pull out the popsicles and enjoy them immediately!

                Optional Garnish: If desired, serve with additional mint leaves or a sprinkle of chili powder on top for an extra kick.
