Spicy Sausage & Apple Skillet Stuffing

1 lb spicy Italian sausage, casings removed

4 cups day-old bread, cubed (preferably ciabatta or sourdough)

2 medium apples, cored and diced (preferably Granny Smith for tartness)

1 medium onion, finely chopped

2 celery stalks, chopped

3 cloves garlic, minced

1 cup chicken or vegetable broth

1/2 cup dried cranberries or cherries (optional)

1/4 cup chopped fresh parsley

1 tsp dried thyme

1 tsp dried sage

1/2 tsp crushed red pepper flakes (adjust to taste)

Salt and pepper, to taste

2 tbsp olive oil or unsalted butter

Instructions
 

Prepare the Skillet: In a large skillet, heat the olive oil or butter over medium heat. Once hot, add the chopped onion and celery. Sauté for about 5-7 minutes, or until softened and translucent.

    Cook the Sausage: Push the veggies to the side of the skillet and add the spicy sausage. Break it apart with a spatula and cook until browned and cooked through, about 6-8 minutes. Ensure that the sausage is nicely crumbled.

      Add Aromatics: Stir in the diced apples and minced garlic into the sausage mixture. Sauté for another 3-4 minutes until the apples start to soften.

        Combine Ingredients: Add the dried bread cubes to the skillet, followed by the dried cranberries or cherries (if using), thyme, sage, crushed red pepper flakes, salt, and pepper. Mix everything together until well combined.
