1 cup unsulfured molasses

3/4 cup unsalted butter, softened

1 cup brown sugar, packed

1 large egg

2 3/4 cups all-purpose flour

1 teaspoon baking soda

1 tablespoon ground cinnamon

1 teaspoon ground ginger

1 teaspoon ground cloves

1/2 teaspoon cayenne pepper (adjust for spice preference)

1/4 teaspoon salt

1/2 cup granulated sugar (for rolling cookies)

Optional: 1/2 cup chopped pecans or walnuts

Preheat Oven: Preheat your oven to 350°F (175°C). Line two baking sheets with parchment paper.

    Mix Wet Ingredients: In a large bowl, cream together the softened butter, brown sugar, and molasses until light and fluffy. This should take about 3-4 minutes using an electric mixer on medium speed.

      Add Egg: Beat in the egg until fully incorporated.

        Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, cinnamon, ginger, cloves, cayenne pepper, and salt.

          Incorporate Dry into Wet: Gradually add the dry ingredients to the wet mixture, stirring until just combined. If you're adding nuts, fold them in at this stage.

            Chill Dough: Cover the dough with plastic wrap and refrigerate for about 30 minutes. This helps with shaping and enhances the flavors.

              Shape Cookies: After chilling, scoop out tablespoon-sized portions of dough and roll them into balls. Roll each ball in granulated sugar to coat.

                Bake: Place the sugar-coated dough balls on the prepared baking sheets, spaced about 2 inches apart. Bake in the preheated oven for 8-10 minutes, or until the edges are set but the centers still look soft. They will continue to firm up as they cool.
