8 oz rice noodles

1 lb boneless, skinless chicken thighs, sliced into thin strips

2 tbsp vegetable oil

4 cloves garlic, minced

1 red bell pepper, thinly sliced

1 cup snap peas, trimmed

1/4 cup green onions, chopped (plus extra for garnish)

1/4 cup cilantro, chopped (for garnish)

For the Spicy Peanut Sauce:

1/2 cup creamy peanut butter

1/4 cup soy sauce (or tamari for gluten-free)

2 tbsp honey or maple syrup

2 tbsp rice vinegar

1 tbsp sesame oil

1-2 tbsp Sriracha (adjust depending on spice preference)

1 tbsp grated fresh ginger

1-2 tbsp warm water (to thin the sauce as needed)

Instructions
 

Prepare Noodles: Cook the rice noodles according to package instructions until al dente. Drain and rinse with cold water to prevent sticking. Set aside.

    Make Spicy Peanut Sauce: In a medium bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, sesame oil, Sriracha, grated ginger, and warm water until smooth and creamy. Adjust the consistency by adding more water if necessary. Taste and add more Sriracha if you prefer extra heat.

      Cook Chicken: In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the sliced chicken thighs and cook for about 5-7 minutes, or until they are cooked through and golden brown. Remove the chicken from the skillet and set it aside.
