Spinach and Artichoke Pasta Bake

12 oz (340 g) penne pasta

1 tbsp olive oil

1 small onion, diced

2 garlic cloves, minced

1 (14 oz) can artichoke hearts, drained and chopped

4 cups fresh spinach (you can use frozen if needed, just thaw and drain)

8 oz cream cheese, softened

1 cup sour cream

1 cup heavy cream

1 cup grated Parmesan cheese

1 cup shredded mozzarella cheese

1 tsp garlic powder

1/2 tsp onion powder

1/2 tsp red pepper flakes (optional)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Preheat your oven to 375°F (190°C).

    Cook the pasta: In a large pot, bring salted water to a boil. Add the penne pasta and cook according to the package instructions until al dente. Drain and set aside.

      Sauté the vegetables: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent (about 3-4 minutes). Add the minced garlic and cook for an additional minute until fragrant.

        Add spinach and artichokes: Stir in the chopped artichoke hearts and fresh spinach. Cook until the spinach is wilted, about 2-3 minutes. Remove from heat and allow to cool slightly.

          Prepare the creamy mixture: In a large mixing bowl, combine the softened cream cheese, sour cream, heavy cream, Parmesan cheese, garlic powder, onion powder, red pepper flakes (if using), and season with salt and pepper. Mix until well blended and smooth.

            Combine: Fold the sautéed spinach and artichoke mixture into the creamy mixture. Gently stir in the cooked penne pasta until everything is well combined.

              Assemble the bake: Transfer the pasta mixture into a greased 9x13 inch (23x33 cm) baking dish. Sprinkle the shredded mozzarella cheese evenly on top.

                Bake: Place the baking dish in the preheated oven and bake for 25-30 minutes, or until the top is golden and bubbly.

                  Garnish and serve: Remove from the oven and let it sit for a few minutes. Garnish with chopped fresh parsley before serving.
