Spinach and Cheese Manicotti

12 manicotti shells

2 cups ricotta cheese

1 cup fresh spinach, chopped (or 1 cup frozen, thawed and drained)

1 cup mozzarella cheese, shredded

1/2 cup grated Parmesan cheese

1 egg

2 cloves garlic, minced

1 teaspoon dried oregano

1/2 teaspoon salt

1/4 teaspoon black pepper

2 cups marinara sauce

Fresh basil leaves, for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Cook the Manicotti Shells: In a large pot of salted boiling water, carefully cook the manicotti shells for about 5 minutes until they are al dente. Drain and rinse with cold water to stop the cooking process; set aside.

      Prepare the Filling: In a large mixing bowl, combine ricotta cheese, chopped spinach, 1/2 cup mozzarella cheese, 1/4 cup Parmesan cheese, egg, minced garlic, oregano, salt, and black pepper. Mix well until fully combined.

        Fill the Manicotti: Using a small spoon or a piping bag, carefully fill each manicotti shell with the cheese and spinach mixture. Make sure they are filled generously but not overflowing.

          Assemble the Dish: Spread 1 cup of marinara sauce evenly on the bottom of a 9x13 inch baking dish. Arrange the filled manicotti on top of the sauce, then pour the remaining marinara sauce over them.

            Top with Cheese: Sprinkle the rest of the mozzarella and Parmesan cheese over the top of the manicotti.

              Bake: Cover the dish with aluminum foil (to prevent sticking, spray the foil with cooking spray) and bake for 25 minutes. Remove the foil and bake for an additional 10-15 minutes or until the cheese is bubbly and golden brown.
