Spinach and Goat Cheese Frittata

6 large eggs

1 cup fresh spinach leaves, chopped

1/2 cup goat cheese, crumbled

1/2 cup cherry tomatoes, halved

1/4 cup onion, finely diced

2 cloves garlic, minced

1/4 cup milk (whole or skim)

2 tablespoons olive oil

Salt and pepper, to taste

Fresh herbs (such as basil or parsley), for garnish (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C).

    Sauté the Vegetables: In a large oven-proof skillet, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional minute, being careful not to burn it.

      Add Spinach and Tomatoes: Toss in the chopped spinach and halved cherry tomatoes. Sauté for 2-3 minutes until the spinach wilts down and the tomatoes are slightly softened.

        Prepare the Egg Mixture: In a bowl, whisk together the eggs and milk until fully combined. Season with salt and pepper to taste.

          Combine Ingredients: Pour the egg mixture over the sautéed vegetables in the skillet. Gently fold in the crumbled goat cheese, making sure it’s evenly distributed throughout the mixture.

            Cook on Stovetop: Cook the frittata on the stovetop for about 4-5 minutes, without stirring, allowing the bottom to set.

              Transfer to the Oven: Carefully transfer the skillet to the preheated oven. Bake for 15-20 minutes, or until the frittata is puffed and just set in the center. You can check doneness by inserting a toothpick into the center; it should come out clean.

                Cool and Serve: Allow the frittata to cool for a few minutes before slicing. Garnish with fresh herbs if desired, and serve warm or at room temperature.
