Spinach and Ricotta Stuffed Shells

20 jumbo pasta shells

2 cups ricotta cheese

1 cup cooked spinach, squeezed dry and chopped

1 cup shredded mozzarella cheese

1/2 cup grated Parmesan cheese

1 large egg

2 cloves garlic, minced

1 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon nutmeg

2 cups marinara sauce

Fresh basil leaves for garnish (optional)

Instructions
 

Preheat the oven to 375°F (190°C).

    Cook the pasta shells according to package instructions until al dente. Drain and set aside to cool slightly.

      In a large mixing bowl, combine the ricotta cheese, cooked spinach, 1/2 cup of the mozzarella cheese, Parmesan cheese, egg, minced garlic, salt, black pepper, and nutmeg. Mix well until all ingredients are combined smoothly.

        Stuff each shell generously with the spinach and ricotta mixture, ensuring they are filled to the brim.

          In a 9x13 inch baking dish, spread 1 cup of marinara sauce evenly across the bottom.

            Place the stuffed shells in the baking dish, open side up, and pour the remaining marinara sauce over the top. Sprinkle the remaining mozzarella cheese evenly across the sauce.

              Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 15 minutes, or until the cheese is bubbly and golden.

                Once done, remove from the oven and let it cool for a few minutes. Garnish with fresh basil leaves if desired.

                  Serve hot and enjoy your delicious cheesy spinach and ricotta stuffed shells!
