4 cups fresh spinach, roughly chopped

3 cloves garlic, minced

1 medium onion, diced

1/2 cup grated Parmesan cheese (plus extra for serving)

1/2 cup heavy cream or a dairy-free alternative

1/4 cup olive oil

1 teaspoon red pepper flakes (optional, for heat)

Salt and pepper, to taste

Fresh basil leaves, for garnish

Cook the Pasta: In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Reserve 1 cup of pasta water, then drain and set aside.

    Sauté the Aromatics: In a large skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 5 minutes. Add the minced garlic and cook for an additional 1-2 minutes until fragrant.

      Add Sun-Dried Tomatoes: Stir in the chopped sun-dried tomatoes and red pepper flakes (if using). Cook for 2-3 minutes, allowing the flavors to meld.
