2 cups fresh spinach, chopped

1 lb (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

8 oz (225g) cream cheese, softened

1 cup shredded mozzarella cheese, divided

1/2 cup sour cream

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1 cup cooked rice (white or brown)

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional for heat)

1 tablespoon olive oil

1/4 cup grated Parmesan cheese

Preheat the Oven: Start by preheating your oven to 375°F (190°C).

    Sauté the Chicken: In a large skillet, heat the olive oil over medium heat. Add the bite-sized chicken pieces and season with salt, pepper, garlic powder, onion powder, and red pepper flakes. Cook until the chicken is browned and cooked through, about 5-7 minutes. Remove from heat.

      Prepare the Sauce: In a mixing bowl, combine the softened cream cheese, sour cream, and half of the mozzarella cheese (1/2 cup). Blend until smooth. Taste and adjust the seasoning if needed.

        Combine Ingredients: In a large mixing bowl, add the cooked chicken, chopped spinach, cooked rice, and the cream cheese mixture. Stir until all the ingredients are evenly coated and combined.

          Transfer to Casserole Dish: Pour the mixture into a greased 9x13 inch (23x33 cm) casserole dish. Spread it out evenly.

            Top the Casserole: Sprinkle the remaining shredded mozzarella cheese (1/2 cup) and grated Parmesan cheese evenly over the top of the casserole.
