Spinach Feta Egg Muffins

6 large eggs

1 cup fresh spinach, chopped

1/2 cup feta cheese, crumbled

1/4 cup milk (dairy or non-dairy)

1/4 cup red bell pepper, finely diced

1/4 cup onion, finely chopped

1/2 teaspoon garlic powder

1/2 teaspoon salt

1/4 teaspoon black pepper

1 tablespoon olive oil (for greasing the muffin tin)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C) and lightly grease a 12-cup muffin tin with olive oil to prevent sticking.

    Prepare the Veggies: In a skillet over medium heat, add a splash of olive oil and sauté the chopped onion and red bell pepper until they are softened, about 3-4 minutes. Add the chopped spinach and cook until wilted, approximately 1-2 minutes. Remove from heat and let cool slightly.

      Whisk the Eggs: In a large mixing bowl, crack the eggs and pour in the milk. Whisk together until well combined. Add the garlic powder, salt, and black pepper, and mix well.

        Combine Ingredients: Fold the sautéed veggies and crumbled feta cheese into the egg mixture, ensuring everything is evenly incorporated.

          Fill the Muffin Tin: Evenly distribute the egg mixture among the muffin cups, filling each about 3/4 full to allow for rising.

            Bake: Place the muffin tin in the preheated oven and bake for 18-22 minutes, or until the tops are set and lightly golden. A toothpick inserted into the center of a muffin should come out clean.

              Cool and Serve: Once baked, remove the muffin tin from the oven and let it cool for about 5 minutes. Carefully remove the muffins from the tin and transfer them to a wire rack to cool further.
