Instructions

Marinate the Chicken:

    - In a medium bowl, combine buttermilk, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken pieces to the marinade, cover, and refrigerate for at least 30 minutes or up to 2 hours.

      Prepare the Sriracha Honey Sauce:

        - In a small bowl, whisk together honey, Sriracha sauce, soy sauce, lime juice, and sesame oil until well-combined. Set aside.

          Make the Waffle Batter:

            - In another bowl, whisk together flour, baking powder, sugar, and salt. In a separate bowl, mix milk, egg, and melted butter. Combine the wet and dry ingredients until just mixed (do not overmix). Let it rest for 5 minutes.

              Fry the Chicken:

                - Heat vegetable oil in a deep skillet over medium-high heat. In a shallow dish, mix flour, baking powder, cayenne pepper, salt, and pepper. Remove chicken from the marinade and dredge in the flour mixture, shaking off excess.

                  - Fry the chicken pieces in batches for about 6-8 minutes, or until golden brown and cooked through. Drain on paper towels.

                    Cook the Waffles:

                      - If using a mini waffle maker, preheat it according to the manufacturer's instructions. Pour a small amount of the batter (about 2 tablespoons) into the waffle maker and cook until golden brown, about 2-3 minutes. Repeat until the batter is used up.

                        Assemble the Bites:

                          - Take a mini waffle, top it with 2-3 pieces of fried chicken, and drizzle generously with the Sriracha honey sauce. Garnish with chopped green onions and sesame seeds.

                            Serve:

                              - Arrange the Sriracha Honey Chicken Waffle Bites on a platter and serve warm. Enjoy your delightful creation with extra sauce on the side!
