Sriracha Lime Chicken Sliders with Slaw

For the Chicken:

2 lbs ground chicken

1/4 cup Sriracha sauce (adjust to taste)

1 lime (juiced and zested)

1 tablespoon honey

2 cloves garlic (minced)

1 teaspoon ginger (grated)

1/2 teaspoon salt

1/2 teaspoon black pepper

1 tablespoon olive oil (for cooking)

For the Slaw:

2 cups green cabbage (shredded)

1 cup carrots (shredded)

1/2 cup red cabbage (shredded)

1/4 cup cilantro (chopped)

1/4 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon lime juice

1 teaspoon Sriracha sauce (adjust to taste)

Salt and pepper to taste

For Assembly:

12 slider buns

Sliced avocados (optional)

Extra cilantro leaves for garnish (optional)

Prepare the Chicken Mixture: In a large bowl, combine the ground chicken, Sriracha, lime juice and zest, honey, minced garlic, ginger, salt, and black pepper. Mix thoroughly until well incorporated.

    Form the Patties: Divide the chicken mixture into 12 equal portions and shape them into slider-sized patties (about 2-3 inches in diameter).

      Cook the Chicken Patties: Heat olive oil in a large skillet over medium heat. Once hot, add the chicken patties and cook for approximately 5-6 minutes on each side, or until cooked through (internal temperature should reach 165°F/75°C).

        Make the Slaw: In a bowl, combine the shredded green cabbage, carrots, red cabbage, and cilantro. In a separate small bowl, whisk together mayonnaise, apple cider vinegar, lime juice, Sriracha, and a pinch of salt and pepper. Pour the dressing over the slaw and mix until the vegetables are well coated.

          Assemble the Sliders: On each slider bun, place a cooked chicken patty, a generous scoop of slaw, and if desired, slices of avocado. Top with extra cilantro leaves for garnish.

            Serve: Close the sliders with the top bun and serve immediately with extra Sriracha on the side for those who want an extra kick!
