For the Meatballs:

1 lb (450g) ground beef or turkey

1/2 cup breadcrumbs

1/4 cup finely chopped onion

2 cloves garlic, minced

1/4 cup chopped fresh parsley

1 large egg

1 teaspoon Worcestershire sauce

1 teaspoon smoked paprika

Salt and pepper to taste

For the BBQ Sauce:

1 cup barbecue sauce (store-bought or homemade)

2 tablespoons honey

1 tablespoon apple cider vinegar

For the Mashed Potatoes:

2 cups (about 1 lb) peeled and cubed potatoes

1/4 cup milk (or cream for a richer taste)

2 tablespoons butter

Salt and pepper to taste

For the Muffins:

Olive oil spray or cooking spray

Preheat the Oven: Preheat your oven to 375°F (190°C). Spray a muffin tin with olive oil or cooking spray and set aside.

    Prepare the Meatballs: In a large bowl, combine the ground meat, breadcrumbs, onion, garlic, parsley, egg, Worcestershire sauce, smoked paprika, salt, and pepper. Mix well until combined.

      Form the Meatballs: Roll the mixture into 1-inch meatballs and place them on a baking sheet.

        Bake the Meatballs: Bake the meatballs in the preheated oven for 15-20 minutes, or until they are cooked through and browned.

          Make the BBQ Sauce: While the meatballs are baking, prepare your BBQ sauce. In a small saucepan, combine the barbecue sauce, honey, and apple cider vinegar. Heat over medium heat until warm, stirring occasionally.

            Cook the Mashed Potatoes: In a large pot, bring salted water to a boil. Add the cubed potatoes and cook until tender, about 15-20 minutes. Drain and return to the pot.

              Mash the Potatoes: Add the milk, butter, salt, and pepper to the drained potatoes. Mash until smooth and creamy.

                Assemble the Muffins: Once the meatballs are done, lower the oven temperature to 350°F (175°C). Spoon a layer of mashed potatoes into each muffin cup until about halfway full. Next, add a meatball on top of the mashed potatoes. Finally, drizzle some of the BBQ sauce over each meatball.

                  Bake the Muffins: Return the muffin tin to the oven and bake for an additional 10-15 minutes, until everything is heated through and slightly golden on top.

                    Serve: Let the muffins cool slightly before removing from the tin. Serve warm with additional BBQ sauce on the side if desired.
