1 lb (450g) chicken thighs, boneless and skinless, cut into bite-sized pieces

2 tablespoons sesame oil

3 tablespoons soy sauce

2 tablespoons honey

1 tablespoon rice vinegar

1 tablespoon sriracha (optional, for heat)

3 cloves garlic, minced

1-inch piece ginger, grated

1/4 cup sesame seeds (toasted)

4 green onions, chopped (white and green parts separated)

8 oz (225g) rice noodles or udon noodles

2 cups mixed stir-fry vegetables (bell peppers, broccoli, snap peas, etc.)

Fresh cilantro for garnish

Lime wedges for serving

Marinate the Chicken: In a bowl, combine the sesame oil, soy sauce, honey, rice vinegar, sriracha, minced garlic, and grated ginger. Add the chicken pieces and toss to coat. Let it marinate for at least 30 minutes (or up to 2 hours in the fridge for a deeper flavor).

    Cook the Noodles: While the chicken marinates, cook the noodles according to the package instructions. Drain and rinse with cold water to stop the cooking process. Set aside.

      Sauté the Chicken: In a large skillet or wok over medium-high heat, add the marinated chicken (discard any leftover marinade). Cook for about 5-7 minutes or until the chicken is golden and cooked through, stirring occasionally.

        Add the Vegetables: Toss in the mixed stir-fry vegetables and the white parts of the green onions. Stir-fry for an additional 3-5 minutes until the veggies are tender-crisp.

          Combine Everything: Add the cooked noodles to the skillet and gently toss everything together, ensuring the noodles and vegetables are well combined with the chicken and coated in the sauce. If it seems dry, you can add a splash of water or extra soy sauce.
