1 lb (450g) boneless, skinless chicken thighs, cubed

1 cup soy sauce (low sodium preferred)

1/2 cup brown sugar

1/4 cup honey

2 tablespoons rice vinegar

2 tablespoons sesame oil

4 cloves garlic, minced

1 tablespoon fresh ginger, grated

1 teaspoon cornstarch

2 teaspoons water

1 tablespoon sesame seeds (for garnish)

2 green onions, sliced (for garnish)

Cooked jasmine rice (for serving)

Instructions
 

Prepare the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, honey, rice vinegar, sesame oil, minced garlic, and grated ginger until well combined. Reserve 1/4 cup of this marinade for glazing later.

    Marinate the Chicken: Add the cubed chicken thighs to the bowl with the remaining marinade. Mix well to ensure every piece is coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours for deeper flavor.

      Cook the Chicken: Heat a large skillet or wok over medium-high heat. Add the marinated chicken (discard any remaining marinade) and sauté for 8-10 minutes, stirring occasionally, until the chicken is cooked through and starts to caramelize.

        Thicken the Sauce: While the chicken cooks, take the reserved marinade and bring it to a gentle boil in a small saucepan. In a separate bowl, mix cornstarch and water together until smooth. Gradually whisk this mixture into the boiling marinade. Cook for an additional 2-3 minutes until the sauce thickens.

          Combine and Glaze: Once the chicken is fully cooked, pour the thickened sauce over the chicken in the skillet. Toss to coat evenly and continue cooking for another 2-3 minutes until everything is heated through and sticky.

            Serve: Remove the chicken from heat and plate it over a bed of cooked jasmine rice. Sprinkle with sesame seeds and sliced green onions for a fresh touch.
