8 slices of thick-cut brioche or challah bread

1 cup cream cheese, softened

1/4 cup powdered sugar

1 teaspoon vanilla extract

1 cup fresh strawberries, hulled and sliced

1/2 teaspoon ground cinnamon

4 large eggs

1/2 cup milk

1 teaspoon vanilla extract (for the egg mixture)

Pinch of salt

Butter or cooking spray (for cooking)

Optional: Maple syrup and powdered sugar (for serving)

Instructions
 

Prepare the Filling: In a medium bowl, mix the softened cream cheese, powdered sugar, and 1 teaspoon of vanilla extract until smooth and creamy. Fold in the sliced strawberries gently to combine. Set aside.

    Assemble the Toast: Take one slice of brioche bread and spread a generous layer of the cream cheese filling on top. Place another slice of bread on top to create a sandwich. Repeat with the remaining slices to make 4 stuffed sandwiches.

      Create the Egg Mixture: In a shallow dish, whisk together the eggs, milk, 1 teaspoon of vanilla extract, cinnamon, and a pinch of salt until well blended.

        Soak the Sandwiches: Heat a large skillet or griddle over medium heat and add a small amount of butter or cooking spray. Dip each stuffed sandwich into the egg mixture, allowing them to soak for 15-20 seconds on each side until fully coated.

          Cook the French Toast: Place the soaked sandwiches in the skillet, cooking for about 3-4 minutes on each side or until golden brown and cooked through. You may need to cook them in batches depending on the size of your skillet.

            Serve: Remove the stuffed French toast from the skillet and place them on plates. Dust with powdered sugar and drizzle with maple syrup if desired. Serve warm with extra strawberries on the side.
