Strawberry Glazed Chicken

4 boneless, skinless chicken breasts

1 cup fresh strawberries, hulled and sliced

1/4 cup balsamic vinegar

1/4 cup honey

2 tablespoons soy sauce

2 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried thyme)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

Instructions
 

Prepare the Glaze: In a medium saucepan over medium heat, combine the sliced strawberries, balsamic vinegar, honey, soy sauce, and minced garlic. Bring to a gentle simmer and cook for about 10 minutes, stirring occasionally until the strawberries break down and the glaze thickens slightly. Remove from heat and stir in the thyme. Set aside.

    Prepare the Chicken: While the glaze is cooking, heat olive oil in a large skillet over medium-high heat. Season both sides of the chicken breasts with salt and pepper.

      Cook the Chicken: Add the chicken breasts to the skillet and sear for about 6-7 minutes on one side until golden brown. Flip the chicken and reduce the heat to medium-low.

        Coat with Glaze: Pour about half of the strawberry glaze over the chicken. Cover the skillet and cook for an additional 6-8 minutes or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

          Glaze Again: Remove the lid and flip the chicken in the skillet, then drizzle the remaining glaze over the top. Let it cook uncovered for another 2 minutes to caramelize the glaze slightly.

            Serve: Transfer the chicken to a serving platter, and garnish with fresh basil leaves if desired. Drizzle any extra glaze from the skillet over the chicken and serve hot!
