Ingredients

1 cup (2 sticks) unsalted butter, melted

1 cup brown sugar, packed

1/2 cup granulated sugar

2 large eggs

2 teaspoons vanilla extract

2 cups all-purpose flour

1 teaspoon baking powder

1/2 teaspoon salt

Zest of 2 lemons

1/4 cup lemon juice (freshly squeezed)

1 cup fresh strawberries, chopped (plus extra for garnish)

1/2 cup white chocolate chips (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and line an 8x8 inch baking pan with parchment paper, leaving some overhang for easy removal later.

Mix Wet Ingredients: In a large mixing bowl, combine the melted butter, brown sugar, and granulated sugar. Whisk until the mixture is smooth and well-blended. Add the eggs, one at a time, followed by the vanilla extract. Mix until combined.

Add Dry Ingredients: In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing just until combined. Be careful not to overmix.

Incorporate Flavors: Stir in the lemon zest and lemon juice. Gently fold in the chopped strawberries and white chocolate chips if using, ensuring they are evenly distributed throughout the batter.

Bake: Pour the batter into the prepared baking pan, smoothing it out with a spatula. Bake in the preheated oven for 25-30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out with a few moist crumbs (not wet batter).

Cool: Once baked, remove the blondies from the oven and allow them to cool in the pan for 10-15 minutes. Use the parchment overhang to lift them from the pan and transfer them to a wire rack to cool completely.

Slice and Serve: Once cooled, cut into squares and garnish with additional chopped strawberries if desired. Enjoy your delicious strawberry lemon blondies!
