Strawberry Lemonade Popsicles

2 cups fresh strawberries, hulled and halved

1 cup fresh lemon juice (about 4-6 lemons)

1/2 cup sugar (adjust based on sweetness preference)

2 cups water

1 teaspoon lemon zest (optional for extra flavor)

Fresh strawberries or lemon slices for garnish (optional)

Instructions
 

Prepare Strawberries: In a blender, add the hulled strawberries and blend until smooth. For a chunkier texture, blend until you reach your desired consistency and set aside.

    Make Lemonade Base: In a medium saucepan over medium heat, combine 1 cup of water and sugar. Stir until the sugar dissolves completely. Remove from heat and let it cool for a few minutes.

      Combine Ingredients: In a large bowl, mix the lemon juice, the remaining 1 cup of water, and the lemon zest (if using). Slowly add the lemon-sugar mixture and stir well to combine.

        Layering Popsicles: If you want a swirl effect, pour a small amount of the lemonade mixture into popsicle molds, followed by a layer of blended strawberries. Repeat the layers until the molds are full, ensuring you finish with the lemonade mixture at the top. If you prefer a mixed flavor, you can simply combine the strawberry puree with the lemonade before pouring it into the molds.

          Insert Sticks: Carefully insert popsicle sticks into the center of each mold.

            Freeze: Place the molds in the freezer and let them freeze for at least 4-6 hours or until solid.

              Unmold & Serve: To release the popsicles, run warm water over the outside of the molds for a few seconds. Gently pull the popsicles out and enjoy! If desired, garnish with fresh strawberry slices or lemon wheels on serving plates.
