Ingredients

For the fruit filling:

4 cups fresh strawberries, hulled and quartered

3 cups fresh peaches, diced (about 4 medium peaches)

1/2 cup granulated sugar

2 tablespoons cornstarch

1 tablespoon lemon juice

1 teaspoon vanilla extract

1/2 teaspoon cinnamon

Pinch of salt

For the crumble topping:

1 cup rolled oats

1 cup all-purpose flour

3/4 cup packed brown sugar

1/2 cup cold unsalted butter, cubed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup chopped nuts (e.g., pecans or almonds, optional)

Instructions

Prepare the Fruit Filling:

    - In a large mixing bowl, combine the quartered strawberries and diced peaches.

      - Add the granulated sugar, cornstarch, lemon juice, vanilla extract, cinnamon, and a pinch of salt.

        - Gently toss until the fruit is well coated and let it sit to release juices while you prepare the crumble topping, about 10 minutes.

          Make the Crumble Topping:

            - In a separate bowl, combine the rolled oats, all-purpose flour, brown sugar, baking powder, salt, and ground cinnamon.

              - Add the cold cubed butter to the dry ingredients. Using your fingers or a pastry cutter, mix until the mixture resembles coarse crumbs.

                - If using, stir in the chopped nuts for added crunch.

                  Assemble the Crisp:

                    - Preheat your oven to 350°F (175°C).

                      - Pour the fruit filling into a greased 9x13-inch baking dish, spreading it evenly.

                        - Evenly distribute the crumble topping over the fruit filling.

                          Bake:

                            - Bake the crumble in the preheated oven for 35-40 minutes or until the topping is golden brown and the filling is bubbly.

                              - If the topping browns too quickly, cover it loosely with aluminum foil for the last 10 minutes of baking.

                                Serve:

                                  - Once baked, remove from the oven and let it cool for about 10-15 minutes.

                                    - Serve warm, optionally topped with vanilla ice cream or whipped cream for an extra treat.
