2 cups fresh strawberries, hulled and sliced

1 cup heavy whipping cream

1 cup mascarpone cheese

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon lemon zest

1/2 teaspoon salt

1 box (10 oz) of ladyfingers or graham crackers

Fresh mint leaves (for garnish, optional)

Instructions
 

Prep the Strawberries: In a medium bowl, toss the sliced strawberries with a tablespoon of granulated sugar (optional) and let them sit for about 15-20 minutes to draw out the juices.

    Whip the Cream: In a large mixing bowl, combine the heavy whipping cream, mascarpone cheese, powdered sugar, vanilla extract, lemon zest, and salt. Using an electric mixer on medium speed, whip the mixture until soft peaks form (about 3-5 minutes).

      Layer the Cake: In a 9x9-inch baking dish, spread a thin layer of the whipped cream mixture on the bottom. Next, dip the ladyfingers one at a time into the juices from the strawberries or in a mixture of milk and vanilla (to soften) and arrange them over the cream layer.

        Add Strawberries: Spoon half of the macerated strawberries over the ladyfingers, spreading them evenly.

          Continue Layering: Add another layer of the cream mixture over the strawberries. Repeat the process with another layer of dipped ladyfingers, the remaining strawberries, and finish with the rest of the cream mixture on top.

            Chill: Cover the baking dish with plastic wrap and refrigerate for at least 4 hours, or overnight if possible, to allow the layers to meld together.
