Ingredients

2 ripe avocados

1 can (5 oz) tuna in water, drained

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 celery stalk, finely chopped

1/4 red onion, finely diced

1 tablespoon capers, rinsed and chopped

1 tablespoon fresh lemon juice

Salt and pepper to taste

Fresh dill or parsley for garnish

Optional: cherry tomatoes, halved, for serving

Instructions

Prep the Avocados: Cut the avocados in half lengthwise and remove the pit. If necessary, scoop out a tiny bit of the flesh to create more space for the filling without compromising the structure.

Make the Tuna Salad: In a medium bowl, combine the drained tuna, mayonnaise, Dijon mustard, chopped celery, diced red onion, and capers. Mix until well combined.

Add Flavor: Squeeze in the fresh lemon juice and season with salt and pepper to taste. Stir gently to incorporate.

Stuff the Avocados: Generously spoon the tuna salad mixture into each avocado half, packing it slightly but not overflowing.

Garnish: Top each stuffed avocado with fresh dill or parsley. If desired, place a few cherry tomato halves on the plate for a vibrant touch.

Serve: Enjoy immediately or chill for a refreshing appetizer or light meal!
