Stuffed Sweet Potato Skins

4 medium-sized sweet potatoes

1 cup cooked black beans (canned or boiled)

1 cup corn kernels (fresh or frozen)

1 cup diced red bell pepper

1 cup shredded sharp cheddar cheese (or a dairy-free alternative)

1/2 cup Greek yogurt (or sour cream, or coconut yogurt for a vegan option)

2 tablespoons olive oil

1 teaspoon cumin powder

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Lime wedges (for serving)

Instructions
 

Prepare the Sweet Potatoes: Preheat your oven to 400°F (200°C). Wash the sweet potatoes thoroughly and pierce each one with a fork a few times. Place them on a baking sheet lined with parchment paper and bake for 45-60 minutes, or until tender when pierced with a fork.

    Mix the Filling: While the sweet potatoes are baking, in a large mixing bowl, combine the cooked black beans, corn, diced red bell pepper, half of the shredded cheese, olive oil, cumin, smoked paprika, garlic powder, salt, and pepper. Mix well until all the ingredients are evenly coated.

      Prepare the Sweet Potato Skins: Once the sweet potatoes are done, remove them from the oven and let them cool slightly. Cut each potato in half lengthwise and scoop out most of the flesh, leaving a small border to maintain the skin's integrity.

        Stuff the Skins: Add the scooped-out sweet potato flesh to the bowl with the filling mixture and stir until well-combined. Spoon the filling mixture back into each sweet potato skin.

          Top with Cheese: Sprinkle the remaining shredded cheese on top of each stuffed sweet potato.

            Bake Again: Return the stuffed sweet potato skins to the oven and bake for an additional 15-20 minutes, until the cheese is melted and bubbly.

              Serve: Remove from the oven and let cool slightly. Garnish with chopped cilantro and serve with lime wedges on the side for extra zest.
