4 large heirloom tomatoes

200g burrata cheese

1 small cucumber, finely diced

1/4 red onion, finely chopped

1/4 cup fresh basil leaves, chopped

1/4 cup arugula, chopped

2 tablespoons extra virgin olive oil

1 tablespoon balsamic glaze

Salt and freshly ground black pepper to taste

Instructions
 

Prepare the Tomatoes: Carefully slice the tops off the heirloom tomatoes and use a spoon or melon baller to scoop out the insides, creating a hollow center. Reserve the pulp in a bowl for later use.

    Mix the Filling: In a mixing bowl, combine the reserved tomato pulp, diced cucumber, chopped red onion, chopped basil, arugula, and burrata cheese. Gently mix until well integrated, being careful not to break the burrata too much.

      Season the Filling: Drizzle in the extra virgin olive oil and balsamic glaze. Season with salt and freshly ground black pepper to taste. Stir gently to combine.

        Stuff the Tomatoes: Using a spoon, generously fill each hollowed tomato with the burrata salad mixture, letting it overflow slightly for an appealing presentation.
