Summer Berry Angel Food Trifle

Ingredients
  

1 store-bought or homemade angel food cake, torn into bite-sized pieces

2 cups mixed berries (strawberries, blueberries, raspberries, and blackberries)

1 cup heavy whipping cream

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 cup vanilla yogurt or mascarpone cheese

Fresh mint leaves for garnish

Zest of 1 lemon (optional)

Instructions
 

Prepare the Berries: In a medium bowl, toss the mixed berries with a tablespoon of powdered sugar. Allow them to macerate for about 10-15 minutes to release their juices.

    Whip the Cream: In a large mixing bowl, pour the heavy cream. Using an electric mixer, whip the cream until it starts to thicken. Gradually add the remaining powdered sugar and vanilla extract. Continue beating until soft peaks form.

      Combine Yogurt and Cream: In another bowl, gently fold the yogurt or mascarpone cheese into the whipped cream until well combined and fluffy. Be careful not to deflate the whipped cream.

        Layer the Trifle: In a large glass serving dish or individual trifle cups, start by layering torn angel food cake pieces on the bottom. Next, spoon a layer of the whipped cream mixture over the cake. Follow with a layer of the macerated berries. Repeat the layers until you reach the top of the dish, finishing with a layer of whipped cream.

          Garnish: Top the final layer with fresh berries and mint leaves. Optional: sprinkle the lemon zest over the top for added brightness.

            Chill: Cover the trifle with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld.
