Ingredients

For the crust:

1 cup all-purpose flour

1/2 cup powdered sugar

1/2 cup unsalted butter, softened

1/2 tsp vanilla extract

1/4 tsp salt

For the cream cheese layer:

8 oz cream cheese, softened

1/2 cup granulated sugar

1 tsp vanilla extract

1 tbsp lemon juice

For the fruit topping:

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup kiwi, peeled and sliced

1 cup peaches, pitted and sliced

1 cup raspberries

Fresh mint leaves for garnish (optional)

For the glaze (optional):

1/4 cup apricot jam

1 tbsp water

Instructions

Prepare the Crust: In a mixing bowl, combine the all-purpose flour, powdered sugar, softened butter, vanilla extract, and salt. Using a pastry cutter or your hands, mix until the dough resembles coarse crumbs. Press the dough evenly into a greased pizza pan (about 12 inches in diameter) to form the crust. Bake in a preheated oven at 350°F (175°C) for 10-12 minutes or until lightly golden. Let it cool completely.

Make the Cream Cheese Layer: In another mixing bowl, beat the softened cream cheese, granulated sugar, vanilla extract, and lemon juice until smooth and creamy. Spread this mixture evenly over the cooled crust.

Arrange the Fruit Topping: Beautifully arrange the sliced strawberries, blueberries, kiwi, peaches, and raspberries on top of the cream cheese layer. Get creative with your design for a stunning presentation!

Prepare the Glaze (optional): In a small saucepan, heat the apricot jam and water over low heat until melted and smooth. Brush this glaze over the fruit to give it a beautiful sheen and prevent browning.

Chill and Serve: Refrigerate the fruit pizza for at least 1 hour before serving. This allows the flavors to meld and the cream cheese layer to firm up a bit. Before serving, garnish with fresh mint leaves if desired.

Slice and Enjoy: Cut into wedges like you would a pizza and serve chilled. Enjoy the refreshing combination of sweet cream cheese and vibrant summer fruits!
