Ingredients

2 cups plain Greek yogurt

1 tablespoon honey (adjust to taste)

1 teaspoon vanilla extract

1 cup granola (your choice)

1 cup strawberries, hulled and sliced

1 cup peaches, diced (or any other stone fruit like nectarines)

1 cup blueberries

1 cup raspberries

Fresh mint leaves for garnish (optional)

Instructions

Prepare the Yogurt: In a mixing bowl, combine the Greek yogurt, honey, and vanilla extract. Stir well until smooth and evenly mixed. Taste and adjust the sweetness if necessary.

Prepare the Fruit: Wash and slice the strawberries, peaches, and blueberries. If using any other fruits, ensure they are fresh and cut into bite-sized pieces.

Assemble the Parfaits: In clear glasses or bowls, start layering the parfaits:

        - Add a layer of Greek yogurt at the bottom, about 1/3 of the glass.

          - Next, add a layer of granola, approximately 2 tablespoons.

            - Add a layer of mixed fruits (strawberries, peaches, blueberries, raspberries).

              - Repeat the layers until you reach the top of the glass, finishing with a layer of yogurt and a sprinkle of granola.

Garnish: If desired, top the parfait with a few more pieces of fruit and a sprig of fresh mint for a pop of color and freshness.

Serve and Enjoy: These parfaits can be served immediately or refrigerated for up to 2 hours for a chilled treat. Enjoy your refreshing Summer Fruit Yogurt Parfaits!
