Sweet Almond Butter Oat Bars

1 ½ cups rolled oats

½ cup almond flour

½ cup almond butter (smooth or crunchy)

½ cup honey or maple syrup

¼ cup coconut oil, melted

½ teaspoon vanilla extract

½ teaspoon baking powder

¼ teaspoon sea salt

½ cup dried fruit (such as cranberries or apricots), chopped

¼ cup dark chocolate chips (optional)

¼ cup chopped nuts (almonds, walnuts, or pecans)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8 inch baking dish with parchment paper, leaving some overhang for easy removal.

    Mix Dry Ingredients: In a large bowl, combine the rolled oats, almond flour, baking powder, and sea salt. Stir until well mixed.

      Combine Wet Ingredients: In a separate bowl, whisk together the almond butter, honey or maple syrup, melted coconut oil, and vanilla extract until smooth and well combined.

        Combine Mixtures: Pour the wet ingredients into the dry ingredients and mix until the oats are fully coated. Fold in the chopped dried fruit, chocolate chips (if using), and chopped nuts for added crunch.

          Transfer to Pan: Pour the mixture into the prepared baking dish and press it down firmly to create an even layer. Use the back of a spatula or your fingers to ensure it's compacted.

            Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden brown and the center is set. The aroma will be irresistible!

              Cool: Once baked, remove from the oven and allow to cool in the pan for about 10 minutes. Then lift the bars out using the parchment overhang and place them on a wire rack to cool completely.

                Cut and Store: Once cooled, cut into squares or bars. Store in an airtight container at room temperature for up to one week or in the fridge for longer shelf life.
