Sweet Apple Cinnamon Oat Cups

2 cups rolled oats

2 medium apples (preferably Granny Smith or Honeycrisp), peeled and diced

1/2 cup almond milk (or any milk of choice)

1/4 cup maple syrup (or honey)

1/2 cup Greek yogurt (or dairy-free yogurt)

1/2 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/2 teaspoon baking powder

1/4 teaspoon salt

1/4 cup chopped walnuts or pecans (optional)

1/4 cup raisins or dried cranberries (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and lightly grease a muffin tin or line with paper liners.

    Mix the Dry Ingredients: In a large mixing bowl, combine the rolled oats, baking powder, cinnamon, and salt. Stir until well incorporated.

      Prepare the Wet Mixture: In a separate bowl, whisk together the almond milk, maple syrup, Greek yogurt, and vanilla extract until smooth.

        Blend the Mixtures: Pour the wet mixture into the bowl of dry ingredients and mix until just combined. Then gently fold in the diced apples, walnuts (if using), and raisins or cranberries (if using), until evenly distributed.

          Fill the Muffin Tin: Spoon the oat mixture into the prepared muffin tin, filling each cup nearly to the top. You should have enough batter for about 12 cups.

            Bake: Place the muffin tin in the preheated oven and bake for 25-30 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.

              Cool: Once baked, remove the oat cups from the oven and allow them to cool in the pan for 5-10 minutes. Then transfer them to a wire rack to cool completely.
