Ingredients

2 ripe bananas, mashed

1/3 cup melted butter

1/2 cup sugar (brown or white)

1 large egg, beaten

1 teaspoon vanilla extract

1 teaspoon baking soda

Pinch of salt

1 cup all-purpose flour

1/2 teaspoon ground cinnamon (optional)

1/4 cup chopped nuts (walnuts or pecans, optional)

1/4 cup chocolate chips (optional)

Instructions

Preheat the oven to 350°F (175°C) and line a muffin tin with paper liners or grease it with non-stick spray.

Mix the wet ingredients: In a large mixing bowl, combine the mashed bananas with the melted butter, mixing until well combined. Stir in the sugar, beaten egg, and vanilla extract until smooth.

Combine the dry ingredients: In a separate bowl, whisk together the flour, baking soda, salt, and ground cinnamon (if using).

Combine wet and dry ingredients: Add the dry ingredient mixture to the banana mixture, gently stirring until just combined. Be careful not to overmix; a few lumps are okay.

Add the mix-ins: Fold in the chopped nuts and chocolate chips, if desired, until they are evenly distributed throughout the batter.

Spoon the batter into the muffin tin: Fill each muffin cup about 2/3 full with the batter to allow for rising.

Bake: Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.

Cool and serve: Once baked, remove the muffins from the oven and let them cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!
