Sweet Chili Chicken Lettuce Wraps

1 lb ground chicken

1 tablespoon vegetable oil

2 cloves garlic, minced

1 tablespoon fresh ginger, minced

1/4 cup sweet chili sauce

2 tablespoons soy sauce

1 tablespoon rice vinegar

1 tablespoon hoisin sauce

1 teaspoon sesame oil

1/2 cup bell peppers, finely chopped (red or yellow for sweetness)

1/2 cup carrots, grated

1/4 cup green onions, thinly sliced

1 head of iceberg lettuce or butter lettuce, leaves separated

1/4 cup chopped cilantro, for garnish

Squeeze of lime juice for serving

Instructions
 

Prepare the Lettuce: Carefully separate the lettuce leaves and wash them under cold water. Pat them dry with a paper towel and set aside.

    Cook the Chicken: In a large skillet, heat the vegetable oil over medium heat. Add the minced garlic and ginger, and sauté for about 30 seconds until fragrant.

      Add Chicken: Increase the heat slightly and add the ground chicken to the skillet. Cook until browned and fully cooked, about 5-7 minutes. Break it apart with a spatula as it cooks.

        Create the Sauce: In a small bowl, whisk together the sweet chili sauce, soy sauce, rice vinegar, hoisin sauce, and sesame oil.

          Combine Ingredients: Once the chicken is cooked, reduce the heat to low. Pour the sauce mixture over the chicken, stirring well to combine. Add the chopped bell peppers and grated carrots, cooking for an additional 2-3 minutes until the veggies are slightly tender but still crisp.
