Sweet Chocolate Chia Energy Bars

1/4 cup honey or maple syrup

1/4 cup unsweetened cocoa powder

1/2 cup chia seeds

1/3 cup dark chocolate chips (or dairy-free chips)

1/4 teaspoon sea salt

1 teaspoon vanilla extract

1/2 cup dried fruits (like cranberries or apricots), chopped (optional)

1/4 cup walnuts or almonds, roughly chopped (optional)

Instructions
 

Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, cocoa powder, chia seeds, and sea salt. Stir well to ensure even distribution of the dry ingredients.

    Combine Wet Ingredients: In a separate bowl, mix the almond butter, honey (or maple syrup), and vanilla extract until smooth and homogenous.

      Combine Wet and Dry: Pour the wet mixture over the dry ingredients. Use a spatula or your hands to mix until everything is well combined. If the mixture feels too dry, add a splash of water or more nut butter to achieve a sticky, cohesive texture.

        Fold in Extras: Gently fold in the dark chocolate chips and any optional add-ins such as dried fruits and nuts for an extra crunch and flavor boost.

          Prepare Your Pan: Line an 8x8-inch (or similar size) baking dish with parchment paper, leaving some overhang for easy removal.
