1 cup fresh sweet corn kernels (about 2 ears)

1 cup ricotta cheese

1 large egg

1/4 cup fresh basil leaves, finely chopped

1 1/2 cups all-purpose flour, plus more for dusting

1/2 teaspoon salt

1/4 teaspoon black pepper

1/4 teaspoon nutmeg (optional)

2 tablespoons olive oil (for cooking)

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving

Prepare the Corn: Blanch the sweet corn kernels in boiling water for about 2 minutes until tender, then drain and cool them under cold water. Pat them dry with a paper towel.

    Make the Gnocchi Dough: In a large mixing bowl, combine the blanched corn, ricotta cheese, egg, chopped basil, salt, black pepper, and nutmeg (if using). Mix until well blended.

      Incorporate the Flour: Gradually add the flour, mixing with a spoon or your hands until a soft dough forms. Be careful not to overwork the dough; it should be slightly sticky but still hold together.

        Shape the Gnocchi: Dust your work surface with additional flour. Divide the dough into four pieces. Roll each piece into a long rope, about 1/2 inch thick, then cut into 1-inch pieces. You can gently roll each piece over a fork to create ridges if desired.

          Cook the Gnocchi: In a large pot of salted boiling water, carefully drop in the gnocchi in batches. They are done when they float to the surface, about 2-3 minutes. Use a slotted spoon to remove them and drain on a plate.

            Sauté the Gnocchi: In a large skillet, heat the olive oil over medium heat. Add the cooked gnocchi and sauté until golden brown and slightly crispy, about 5-7 minutes, tossing gently to avoid breaking them.
