Ingredients
  

1 cup sweet corn (fresh or frozen)

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

1 tablespoon lemon juice

1 garlic clove, minced

2 tablespoons olive oil

1 teaspoon ground cumin

Salt and pepper to taste

1/4 cup fresh cilantro or parsley, chopped

4 slices of whole grain bread (or your choice)

Cherry tomatoes, halved (for topping)

Crushed red pepper flakes (optional, for garnishing)

Instructions
 

Prepare the Sweet Corn Hummus:

    - If using fresh corn, blanch it in boiling water for 2-3 minutes and then quickly cool it in an ice bath. If using frozen corn, simply thaw it.

      - In a food processor, combine the sweet corn, chickpeas, tahini, lemon juice, garlic, 1 tablespoon olive oil, and ground cumin. Blend until smooth.

        - If the mixture is too thick, add a tablespoon of water at a time until you reach the desired consistency. Season with salt and pepper to taste.

          Toast the Bread:

            - Preheat your oven or toaster. Toast the whole grain bread slices until golden brown and crisp, about 3-5 minutes.

              Assemble the Toast:

                - Spread a generous layer of the sweet corn hummus on each slice of toasted bread.

                  - Top with halved cherry tomatoes and sprinkle the chopped cilantro or parsley over the top.

                    - Drizzle a little olive oil and, if desired, sprinkle crushed red pepper flakes for an extra kick.
