1 cup all-purpose flour

1 cup cornmeal

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1 cup whole milk

1/4 cup unsalted butter, melted

1 large egg

1 cup sweet corn kernels (fresh or frozen)

1 cup shredded sharp cheddar cheese

1-2 jalapeños, finely chopped (adjust to taste)

2 tablespoons honey (optional, for sweetness)

Instructions
 

Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a muffin tin or line it with paper liners.

    Mix Dry Ingredients: In a large mixing bowl, whisk together the flour, cornmeal, baking powder, baking soda, and salt until well combined.

      Prepare Wet Ingredients: In a separate bowl, whisk together the milk, melted butter, and egg until smooth. If you're using honey for added sweetness, mix it in here.

        Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir gently until just combined. Be careful not to overmix; a few lumps are okay.

          Add Corn, Cheese & Jalapeño: Fold in the sweet corn, shredded cheddar cheese, and chopped jalapeños until evenly distributed throughout the batter.
