Ingredients

1 cup all-purpose flour

1 cup cornmeal

1/4 cup granulated sugar

1 tablespoon baking powder

1/2 teaspoon salt

1 cup buttermilk

1/4 cup unsalted butter, melted

2 large eggs

1/4 cup honey

1/2 cup corn kernels (fresh or frozen)

1/2 teaspoon cinnamon (optional, for extra warmth)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C) and grease an 8-inch square baking dish or a cast-iron skillet with butter or cooking spray.

Mix Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, cornmeal, granulated sugar, baking powder, salt, and cinnamon (if using). Whisk together until well combined.

Combine Wet Ingredients: In a separate bowl, whisk together the buttermilk, melted butter, honey, and eggs until smooth and fully combined.

Incorporate the Mixtures: Pour the wet ingredients into the dry ingredients, stirring gently until just combined. Be careful not to overmix; a few lumps are okay.

Add Corn: Fold in the corn kernels into the batter until evenly distributed.

Pour and Bake: Pour the batter into the prepared baking dish or skillet, spreading it out evenly. Bake in the preheated oven for 20-25 minutes, or until the top is golden and a toothpick inserted into the center comes out clean.

Cool and Prepare: Allow the cornbread to cool in the pan for about 10 minutes before slicing.

Make Sweet Honey Butter: While the cornbread is cooling, prepare the sweet honey butter. In a small bowl, combine 1/2 cup softened unsalted butter with 1/4 cup honey and mix until fluffy and well combined.

Serve: Slice the cornbread warm, and serve with a generous dollop of sweet honey butter on top. Enjoy the delightful sweetness!
