3 cups old-fashioned rolled oats

1 cup nuts (almonds, walnuts, or pecans), roughly chopped

1 cup seeds (pumpkin seeds or sunflower seeds)

1/2 cup unsweetened shredded coconut

1/2 teaspoon sea salt

1 teaspoon ground cinnamon

1/2 cup maple syrup

1/4 cup coconut oil, melted (or vegetable oil)

1 teaspoon pure vanilla extract

1/2 cup dried fruit (raisins, cranberries, or apricots), chopped

Optional: 1/2 cup chocolate chips or cacao nibs

Instructions
 

Preheat the Oven: Begin by preheating your oven to 350°F (175°C). Line a large baking sheet with parchment paper for easy cleanup.

    Mix Dry Ingredients: In a large mixing bowl, combine the rolled oats, chopped nuts, pumpkin seeds, shredded coconut, sea salt, and ground cinnamon. Stir until evenly mixed.

      Prepare Wet Ingredients: In a separate bowl, whisk together the maple syrup, melted coconut oil, and vanilla extract until well combined.

        Combine Mixtures: Pour the wet mixture over the dry ingredients and mix thoroughly until all the dry ingredients are coated. Make sure there are no dry spots.

          Spread on Baking Sheet: Transfer the mixture onto the prepared baking sheet, spreading it out into an even layer. Use a spatula to press it down gently for more clumps.

            Bake the Granola: Place the granola in the preheated oven and bake for about 25-30 minutes, stirring halfway through for even browning. Bake until the granola is golden brown and fragrant.

              Cool and Add Blend-ins: Once baked, remove the granola from the oven and let it cool completely on the baking sheet. This will allow it to harden and cluster together. Once cooled, stir in the dried fruit and, if using, chocolate chips or cacao nibs.

                Store: Transfer the granola to an airtight container and store it at room temperature for up to 2 weeks. Enjoy it on its own, with yogurt, or as a topping for smoothies!
