2 cups rolled oats

1 cup walnuts, chopped

1/2 cup maple syrup

1/4 cup almond butter (or peanut butter)

1/4 cup coconut oil, melted

1/2 teaspoon vanilla extract

1/4 teaspoon salt

1/2 teaspoon ground cinnamon

1/2 cup dried cranberries or raisins (optional)

1/4 cup dark chocolate chips (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal later.

    Toast the Walnuts: Spread the chopped walnuts on a baking sheet. Toast them in the preheated oven for 5-7 minutes, or until fragrant and lightly golden. Keep an eye on them to prevent burning.

      Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, toasted walnuts, salt, cinnamon, and dried cranberries or raisins, if using. Stir until evenly mixed.

        Combine Wet Ingredients: In a separate bowl, whisk together the maple syrup, almond butter, melted coconut oil, and vanilla extract until smooth and well-blended.

          Combine Mixtures: Pour the wet mixture into the bowl with the dry ingredients. Stir until everything is fully combined and forms a sticky mixture. If using, fold in the dark chocolate chips.

            Press into the Pan: Transfer the mixture into the prepared baking dish. Press it down firmly and evenly into the corners using a spatula or your hands.

              Bake: Bake in the preheated oven for 20-25 minutes, or until the edges are golden and the center is set.

                Cool and Cut: Remove from the oven and let it cool in the pan for about 10 minutes. Then, using the parchment overhang, lift the bars out and place them on a wire rack to cool completely. Once cool, cut into squares or bars.

                  Store: Store in an airtight container at room temperature for up to a week, or in the refrigerator for up to two weeks.
