Sweet Potato Tots with Chili Lime Dip

For the Sweet Potato Tots:

2 medium sweet potatoes (about 1 lb), peeled and cubed

1 cup breadcrumbs (preferably panko for extra crispiness)

1/4 cup grated Parmesan cheese (optional for extra flavor)

1/2 teaspoon garlic powder

1/2 teaspoon onion powder

1/2 teaspoon smoked paprika

1/4 teaspoon cayenne pepper (adjust to taste)

Salt and pepper, to taste

1 large egg, lightly beaten

Olive oil or cooking spray, for baking

For the Chili Lime Dip:

1/2 cup sour cream or Greek yogurt

2 tablespoons mayonnaise

Juice of 1 lime (about 2 tablespoons)

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper, to taste

Fresh cilantro, chopped (for garnish)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it with cooking spray.

    Cook Sweet Potatoes: Place the cubed sweet potatoes in a pot of boiling water. Cook for about 15-20 minutes, until tender. Drain and let them cool slightly.

      Mash the Sweet Potatoes: Transfer the cooked sweet potatoes to a large mixing bowl and mash them using a fork or potato masher until smooth.

        Mix Ingredients: To the mashed sweet potatoes, add breadcrumbs, Parmesan cheese, garlic powder, onion powder, smoked paprika, cayenne pepper, salt, pepper, and the beaten egg. Mix until well combined. If the mixture feels too wet, add a bit more breadcrumbs.

          Form the Tots: Using your hands, shape the mixture into small, bite-sized tots (about the size of a golf ball) and place them on the prepared baking sheet.

            Bake the Tots: Lightly spray or drizzle olive oil over the tops of the sweet potato tots. Bake in the preheated oven for 20-25 minutes, or until golden brown and crisp, flipping halfway through.

              Prepare the Chili Lime Dip: While the tots are baking, mix together the sour cream (or Greek yogurt), mayonnaise, lime juice, chili powder, garlic powder, salt, and pepper in a small bowl. Adjust seasoning as needed. Garnish with chopped cilantro.

                Serve and Enjoy: Once the sweet potato tots are golden and crispy, remove them from the oven and let cool for a few minutes. Serve warm with the chili lime dip on the side.
