2 cups fresh or frozen raspberries

1/4 cup granulated sugar (adjust to taste)

1 tablespoon lemon juice

1 tablespoon cornstarch

1 tablespoon water

For the Oat Crumble:

1 cup rolled oats

1 cup all-purpose flour

1/2 cup brown sugar, packed

1/2 teaspoon baking powder

1/4 teaspoon salt

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

1/2 teaspoon ground cinnamon (optional)

Instructions
 

Prepare the Raspberry Filling:

    - In a medium saucepan, combine the raspberries, granulated sugar, lemon juice, cornstarch, and water.

      - Cook over medium heat, stirring gently until the mixture starts to bubble and thicken. This usually takes about 5-7 minutes.

        - Once thickened, remove from heat and let it cool slightly while you prepare the crumble.

          Make the Oat Crumble:

            - Preheat your oven to 350°F (175°C). Line an 8x8-inch baking dish with parchment paper, allowing some overhang for easy removal.

              - In a large bowl, mix together the rolled oats, flour, brown sugar, baking powder, salt, and ground cinnamon.

                - Add the melted butter and vanilla extract to the dry ingredients and mix until crumbly.

                  Assemble the Bars:

                    - Press half of the oat crumble mixture into the bottom of the prepared baking dish to form a crust.

                      - Pour the raspberry filling over the crust, spreading it evenly.

                        - Sprinkle the remaining oat crumble on top of the raspberry layer.

                          Bake:

                            - Bake in the preheated oven for 25-30 minutes, or until the topping is golden brown.
