1 pound boneless, skinless chicken thighs, cut into bite-sized pieces

1/2 cup soy sauce (low sodium preferred)

1/4 cup packed brown sugar

2 tablespoons honey

2 tablespoons rice vinegar

2 cloves garlic, minced

1 tablespoon grated fresh ginger

1 tablespoon sesame oil

1 tablespoon cornstarch

2 tablespoons water

1 tablespoon sesame seeds (for garnish)

2 green onions, thinly sliced (for garnish)

Instructions
 

Marinate the Chicken:

    - In a medium bowl, whisk together the soy sauce, brown sugar, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Reserve 1/4 cup of the marinade for later use.

      - Add the chicken pieces to the remaining marinade, ensuring they are well coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.

        Prepare the Skewers:

          - If using bamboo skewers, soak them in water for 30 minutes to prevent burning on the grill. If using metal skewers, you can skip this step.

            Cook the Sauce:

              - In a small saucepan, combine the reserved marinade. In a separate bowl, mix the cornstarch with water to create a slurry, then add it to the saucepan.

                - Bring the mixture to a boil over medium heat, stirring constantly until it thickens, then reduce the heat to low. Let it simmer while you grill the chicken.

                  Skewer the Chicken:

                    - Thread marinated chicken pieces onto the skewers, leaving a little space between each piece for even cooking.

                      Grill the Skewers:

                        - Preheat your grill (or grill pan) to medium-high heat. Lightly oil the grill grates to prevent sticking.

                          - Place the skewers on the grill and cook for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks. Brush the skewers with the thickened teriyaki sauce during the last minutes of grilling.
