For the chili:

1 tablespoon vegetable oil

1 small onion, finely chopped

2 cloves garlic, minced

1 pound ground beef (or a meat substitute)

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) pinto beans, drained and rinsed

1 can (8 oz) tomato sauce

1 tablespoon chili powder

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt and pepper to taste

1 cup beef broth or water

For the burrito:

4 large flour tortillas

1 cup shredded cheddar cheese

1 cup shredded lettuce

1 small tomato, diced

1/2 cup sour cream (optional)

Hot sauce (optional)

Instructions
 

Prepare the Chili:

    - Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and sauté until translucent, about 3-4 minutes. Add the minced garlic and cook for an additional minute until fragrant.

      - Increase the heat to medium-high and add the ground beef. Cook, breaking it apart with a spoon, until browned and no longer pink.

        - Once the beef is cooked, stir in the kidney beans, pinto beans, tomato sauce, chili powder, cumin, smoked paprika, salt, and pepper. Mix well.

          - Pour in the beef broth or water, bring to a simmer, and then reduce the heat to low. Let it simmer for 20-30 minutes to thicken, stirring occasionally.

            Assemble the Burritos:

              - Warm the flour tortillas in a microwave or on a skillet until pliable.

                - In the center of each tortilla, layer 1/4 of the chili mixture, followed by a generous portion of shredded cheese, some shredded lettuce, and diced tomato. Add sour cream and hot sauce if desired.

                  - Fold the sides of the tortilla over the filling, then roll it up from the bottom to create a burrito shape.

                    Serve:

                      - Place the burritos seam-side down on a plate. If desired, you can toast them on a skillet for 2-3 minutes on each side until crispy.

                        - Slice in half and serve warm, with extra toppings if you like!
