2 cans young green jackfruit in water or brine, drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

3 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon cumin

½ teaspoon chili powder

½ teaspoon cayenne pepper (adjust to taste)

1 cup BBQ sauce (store-bought or homemade)

Salt and pepper to taste

8 slider rolls (preferably whole grain or brioche)

½ cup coleslaw mix (optional for serving)

Pickles for garnish (optional)

Instructions
 

Prepare the Jackfruit: Start by cutting the jackfruit pieces in half to create smaller chunks. Next, using your fingers or a fork, shred the jackfruit pieces to resemble pulled meat. Set aside.

    Sauté the Aromatics: In a large skillet over medium heat, add the olive oil. Once hot, add the chopped onion and sauté for about 5 minutes or until the onion becomes translucent. Add the minced garlic and cook for an additional minute until fragrant.
